Penfolds Bin 707 Cabernet Sauvignon, 1996

"Full red-purple; concentrated, ripe, cassis and blackberry fruit leaps from the glass, with oak present but trailing behind. The palate is as rich, ripe, succulent and concentrated as the bouquet suggests, redolent with cassis, and long, lingering tannins". James Haliday, Wine Companion On-line

Leeuwin Estate, Art Series, Cabernet Sauvignon, 2003 (6 bottles @ $52.40)

The Art Series Cabernet stands as one Leeuwin 's most opulent and age-worthy wines. "One of Australia’s great Bordeaux-styled Cabernets in the Margaret River. Boasts spicy, subtle French oak, cedar, spice box, black currant aromas and flavours gently touched by licorice and herbs. This attractive, medium-bodied Cabernet exhibits layers of richness, a graceful, restrained personality, decent acidity, noticeable but sweet tannin. Outstanding!” -Robert Parker.

Mitolo, Serpico, 2005 (6 bottles @ $68.50 per bottle)

Mitolo, Serpico, 2005 (6 bottles @ $68.50 per bottle)

94 Points. "The 2005 Cabernet Sauvignon Serpico (100% McLaren Vale fruit) was treated like Amarone with the grapes picked relatively underripe and green, then dried for seven weeks before they were fermented. The result is a distinctive, full-bodied Cabernet with no pruny or raisiny characteristics whatsoever. Its fresh acidity and lively backbone support a wine of enormous richness and intensity, offering up classic creme de cassis notes intermixed with white chocolate, damp forest, cedar, and toasty oak. Full-bodied, opulent, powerful, and totally dry, with a sweet, rich mid-section, it should age well for 10-15 years". Wine Advocate # 167, Oct 2006
