They can do this with Soave? While other great examples of northern Italy's delicious and food-friendly white are often the result of layering and 'complexing' winemaking (malo and oak etc) the Coffele Soaves are simply the most vivid expression of great fruit. They are fresh, textured and zingy and show this fruit quite distinctly with the characters of flowers, honey, minerals and touches of herb or spice.
Coffele are the real thing in so many ways; a true family winery, right down to hand harvesting in buckets of no more than 20 kg, before they are sent to the tender cares of the winery. They use the premier variety Garganega almost exclusively, but still cultivate a little of the Trebbiano and others. The Coffele family's focus is on superior Soave and they happily maintain the craft of making some of the rare and curio styles, like Soave Sparkling and Recioto.
Soave might be the great all-rounder white. The cool freshness of its fruit character is distinctive, yet not obvious and people just love the texture, the 'mouthfeel' these are noted for. When they finish on the 'up', so fresh and lively like a Coffele Soave, it's no wonder!
